The Wheels and Mortar series will focus on trucks that have a brick-and-mortar presence. As trucks develop new strategies that incorporate buildings in addition to their mobile locations, this series will focus on those more permanent/less-mobile strategies. This segment looks at the Caribbean-Asian fusion concept, Sarge’s. Sarge’s came from the Sarge’s Chef on Wheels truck, which is a fan favorite from its spin on Shrimp and Grits and Shrimp Po’Boy.
Earlier this summer, Sarge launched a sneak attack on food truck fans by announcing a restaurant location. With this announcement, Northern Wake County fans were delighted to here Sarge taking over a space in the Rolesville Commons shopping center. The restaurant is not close to me, but I was able to visit awhile back for a Pop-Up Saturday event.
The restaurant feels like home, similar to a real large breakfast nook with several tables inside. It’s a hot one today, but on a cooler day, guests can eat outside and some of the center’s tables. The restaurant is opened for breakfast and lunch, so the menu lists classic breakfast items like eggs, breakfast meats, and waffles. Truck fans will be relieved to find classic Sarge’s fare like Shrimp and Grits and Po Boys on the menu. Since my visit was around lunch and I was afraid to deviate from my personal favorite, I ordered the Spicy Shrimp Po Boy. Julius West, Sarge, can still cook a mean Po Boy whether on a mobile or in stable kitchen.

While the restaurant hours are currently just weekday hours, Sarge’s fans can get a glimpse during Saturday, September 13th from 3-8pm. Sarge’s will have their FIRST Crab Feast-Sarge’s Style Low Country Boil. Spicy shrimp, crab legs, or Gum-bah crab is on the Crab Feast menu ($27.95). Also available will be Steamed local NC shrimp and Sarge’s famous Shrimp and Grits. Sarge is asking for those interesting to attend to RSVP via their Facebook Event Page by September 10th. If you can do so, as it will help them gauge attendance and minimize your disappointment.

Interesting series concept. As food truck owners get burned out, I wonder how many will move to physical locations as well. Curious as to what restaurant segment they would fill? Fast casual?
It all depends on the owner’s strategy. There are some they are running a food truck model, some open a brick and mortar to increase business, and some have closed locations and operated more trucks. I guess well see as the series progresses.
