Titled “An Evening of Souther Comfort Food” Chef Suzie Keenan of Olio & Aceto presents a four course meal and wine pairings at their Chapel Hill cafe.
February 26th March 12th, Olio and Aceto Cafe will host a “Reinvented and Amplified” dinner. The concept takes Southern classics with an added touch of Chef Keenan’s flair, his experience hosting top wine tours will shine through to make your stay one to remember. In addition to the culinary artistry, each course will have a wine carefully select for it. Dinner will start at 7pm.
Starters “A Warm Southern Welcome”
Two items in this course! Mini buttermilk biscuit with honey butter and chow chow and polenta cake with pimento cheese and fried okra. My take is the polenta will begin the journey down the “amplified” path as we say good bye corn bread, Buongiorno polenta. Fans of the Southern BLT will liberally spread the pimento cheese. Both items will be paired with a very special Southern cocktail.
First Course “Bless Your Heart”
Sweet Potato Soup. Crispy pancetta, candied walnuts, parsley oil, sherry vinegar & coconut cream. A great sweet course preparing for the culinary apex on the horizon.
Second Course “My Oh My”
Chicken and Waffles. Buttermilk fried duck confit, blood orange waffle and braised kale. A new classic reinvented with an another Olio and Aceto classic ingredient, kale.
Third Course “Give me some Sugar”
Pecan Tart. Bourbon ice cream and salted caramel sauce. A culinary denouement made with Southern flair.

The one item that really raises my eyebrows is the “Chicken and Waffles”. I am interested to see how duck will taste in lieu of chicken. I am excited to have some sweet potatoes during NC Sweet Potato month, too.
